Cheese spaetzle

Serves 4


400 g finely ground wheat flour
4 eggs
1 pinch salt
100 ml water
50 g Spätzlekäse cheese
(potentially mixed with grey cheese)
4 onions
A little milk, a little cream
1 tsp beef soup


1. To create the dough, mix the eggs and salt in a mixer, gradually adding the flour until the dough becomes viscous.

2. Leave the dough to rest, then use a noodle grater to grate into boiling water.

3. Finely dice one onion and slice the remaining onions into rings (for fried onions). Sauté the diced onion in a little oil, then add the prepared noodles. Leave to brown and stir.

4. Add half a glass of water and the beef soup, then boil down. Finally, add a little milk and cream and fold in the grated cheese. Garnish with fried onions and parsley.
