Approx. 200 g butter for pre-cooking, plus enough more butter for frying
250 g wheat flour
750 ml milk
A pinch of salt
Sugar for dusting
Cranberries as compote or jam as accompaniment

1. Melt about 200 g butter in an iron frying pan, thicken with 250 g flour and pre-cook the mixture with 750 ml milk and a pinch of salt.
2. Melt plenty of butter in a second pan, press the pre-cooked mixture in a thin layer and fry until crispy brown on both sides.
3. Melchermuas is often eaten straight out of the pan, sprinkled with sugar or covered with cranberries in the middle.
