An ancient recipe which produces a tasty and delicate dish. Since the Middle Ages, Zillertal grey cheese has been made by hand from hay milk. Always the same – but different each time. The star in Zillertal’s culinary heaven owes its aromatic flavour to a ripening period of several weeks. Whatever people may say, it embodies the philosophy of Zillertal: highest enjoyment!



The valley cuisine fascinates visitors with its refined combination of traditional and modern elements featuring regional products. This is the essence of Zillertal in its most tasty form – on your plate in mountain huts or in excellent catering businesses. Now, let’s get back to the grey cheese. Its secret is easy to uncover for anyone who tries. In the “Zillertaler Heumilch Sennerei” in Fügen, visitors can experience the transparent production process at first hand – from the raw hay milk right through to the refined product.
