
Serves approx. 700 ml:
1 kg ripe, dark, black elderberries (after destemming)
750 g sugar
Sterile bottle
Kitchen towel
Preparation:
1. Remove the berries from the stems with a fork, wash them in a sieve, place them in a large saucepan and add enough water to just cover the elderberries (approx. 600 ml).
2. Bring the berries to the boil and simmer for 5 minutes, stirring constantly. Strain the berries and juice through the tea towel.
3. Weigh the elderberry juice and boil it down with an equal amount of sugar in a saucepan for approx. 10 minutes until it has a syrupy consistency, then pour into sterile bottles.
