For all those who want to reminisce about their wonderful holiday time in the Zillertal, but also as a foretaste for those we will welcome in 2022: Our Zillertal New Year's Eve menu 2021! Created in the spirit of the Zillertal culinary motto - upholding tradition, but never shying away from thinking outside the box - the absolute classic remains at the centre (of the table): raclette. All around, however, we bring the magic of the Zillertal to your festive table with our super tasty recipes. The basic idea behind our menu: simple (&) special.
Would you like something remarkable but simple? All you need for our beer soup is a pot, a little time and two secret ingredients: Zillertal Imperial Hell and honey. The latter to taste for that special flavour. If necessary, you can also use another light-coloured Pilsner instead of Zillertal Imperial - the main thing is that it tastes good! Incidentally, the soup is based on beef stock, which can of course be replaced with a vegetable soup for a vegetarian version.
The dough for the beer bread sticks needs to rest for at least two hours, so it is advisable to prepare it the day before. Then you can simply put the sticks in the oven on New Year's Eve. Tip: If you have some beer bread sticks left over, all the better - they also go really well with melted cheese (just like the pan-fried bread in the next recipe)!
This dough can also be mixed the day before. As the name suggests, it is prepared in a pan, so it is best to fry it shortly before the festive meal and serve it in a container to keep it warm. Because the pan-fried bread tastes best fresh and warm - which is why everyone at the table can fry their own small pan-fried breads on the raclette grill.
In addition to the melted cheese, roasted vegetables and meat and the bread, the only thing missing for the perfect raclette á la Zillertal are delicious spreads. We have three of them: the potato and grey cheese spread, the red lentil spread and the pear and ginger spread! All three can be prepared the day before and stored in the fridge. This not only saves time, but also ensures that all the ingredients are well infused, allowing the full flavour to develop.
We have one more speciality for the main course - the delicious combination of two sins: Chocolate and bacon. At the end of the year, you can treat yourself to this. Incidentally, the crispy bacon in a chocolate coating tastes best with hardened dark chocolate coating. Preparation is neither complicated nor does it take long. And of course, this tasty garnish shouldn't put anyone off grilling bacon strips fresh on the stone slab of the raclette. And speaking of chocolate: how about starting the new year with a sweet raclette?
If you prefer sweet to savoury, why not start 2022 with this raclette recipe? The idea: prepare the batter and grape cream in the morning (or the day before) and fry delicious pancakes in the raclette pans at the table in the evening! This is not only delicious, but also saves time, as the preparation for the pancake batter and the grape cream is done quickly - and then everyone cooks for themselves. It's best to get your favourite brand of vanilla ice cream or another of your favourite ice cream flavours. We wish you bon appétit and a delicious start to the new year!
