Zillertal Garnet Splinters

Ingredients for the dough:
150 g wheat flour
1 tsp baking powder
50 g sugar
1 pkg vanilla sugar
a few drops of rum flavouring
50 g soft butter
2 tbsp milk

For the topping:
200 g dark chocolate
75 g butter
1 pkg vanilla sugar
a few drops of rum flavouring
100 g chopped almonds

For the icing:
75 g dark chocolate
1 tsp cooking oil
optimal: white chocolate



  1. Mix the flour and baking powder and knead into a dough with the remaining ingredients.
  2. Then roll out thinly and cut out biscuits. Bake the leftover dough from cutting the biscuits, they will be crumbled later!
  3. Bake at 160°C for about 10 minutes and leave to cool.
  4. In the meantime, melt the chocolate and butter in a pan, add the rum flavouring and vanilla sugar, then fold in the crumbled dough scraps and the chopped almonds.
  5. Spread the mixture on the biscuits as a small mountain peak and leave to set.
  6. For the icing, chop the chocolate, melt in a bain-marie and decorate the garnet chips with it.
